Question by greyrider: Has anyone here tried using quinoa as a substitute for rice in rice pudding?
I’m just curious how it turned out. I love rice pudding but have been substituting quinoa as much as possible in most of my recipes calling for rice. I think it might turn out a bit more like a tapioca-ish texture perhaps . . . ?

I’ve tried it and was a little disappointed with the flavor. The next time I did it I made it with quinoa and basmati rice mixed together. Which balanced each other nicely.
I usually make rice pudding in the Indian tradition. I use coconut milk, cardamom, a little brown sugar, a pinch of salt, low fat half and half, slivered almonds and golden raisins. It’s soooo yummy. Also if I have any fresh strawberries around I cut those up and put them on top. It’s a really great breakfast.
