Has anyone out there ever baked with quinoa flour? Can you simply substitute it for regular flour?

Question by Martin L: Has anyone out there ever baked with quinoa flour? Can you simply substitute it for regular flour?
…or do you have to use recipes that are quinoa-specific?

Any advice you may have would be greatly appreciated. Thank you!

No, you can’t just replace wheat flour with quinoa flour. You have to find quinoa-specific recipes. It’s definitely a healthy, gluten-free option. I bake cookies with almond flour and also use it as a coating with herbs & seasoning when frying fish fillets for other gluten free options. But using quinoa flour, from what I’ve read, is pretty tricky. There’s some sort of heat process step that needs to be taken before it can actually be used for baking. Unless the package says “pretoasted” on it, that heat process step HAS to be taken in order to use it, or it will taste terrible. Here’s an interesting article about that. There’s also a link to some recipes. But do read the article.
