No, you can’t just replace wheat flour with quinoa flour. You have to find quinoa-specific recipes. It’s definitely a healthy, gluten-free option. I bake cookies with almond flour and also use it as a coating with herbs & seasoning when frying fish fillets for other gluten free options. But using quinoa flour, from what I’ve read, is pretty tricky. There’s some sort of heat process step that needs to be taken before it can actually be used for baking. Unless the package says “pretoasted” on it, that heat process step HAS to be taken in order to use it, or it will taste terrible. Here’s an interesting article about that.
