I hear that quinoa has great health benefits. I wanted to know if I can make risotto with it before I bought it at the store.

I’ve never tired it, but my guess is it won’t work well. Risotto gets its creaminess from the starch in the rice. Quinoa won’t give you that. I use quinoa in place of plain rice (often with seasonings in it), but I have doubts about how it would be in a classic risotto.
