Quinoa Dinner-Tofu, Vegan Pesto, Sun-Dried Tomatoes

Follow me on Twitter: www.twitter.com My Blog: brownvegan.com Print the recipe from my blog bit.ly Ingredients: 2 cups quinoa 4 cups of water 1 block of firm tofu, pressed and cubed 1/3 cup onion, chopped 1 garlic clove, minced 2 cups of fresh spinach The Sweetest Vegan’s pesto recipe (makes 1 cup) Β½ cup sun-dried tomatoes 1 tsp olive oil (to saute onion & garlic) 1 tbsp garlic powder Salt & pepper to taste Rinse the quinoa with a mesh strainer until the water runs clear. Combine with 4 cups of water in a saucepan and bring to a boil. Afterwards, cover with a lid and reduce heat to med-lo and cook for about 20 minutes. On medium heat, fry the tofu in a pan for 5 minutes on each side. Tranfer to a bowl, add in garlic powder and mix together until coated. Saute the onion and garlic on medium heat until translucent. Add in quinoa, tofu and spinach and cook for 3 minutes on medium heat. Remove from heat. Make the vegan pesto and mix in with quinoa and sun-dried tomatoes. Season with salt and pepper to taste.   3. To tell the truth I am not a vega nor am I vegetarian but I do eat plenty of vegan/vegetarian dishes. I LOVE quinoa! I can see we are going to get along! This looks awesome and I am sure it tastes awesome!? Your vegan pesto is awesome! I make lots of pesto’s and this one is a winner, simple and delish!
