It’s packed with nutrients from the kale, the quinoa, and the avocado, and is a perfect start to a chilly winter day. Ingredients 1 large avocado 1 cup quinoa, cooked 1/2 small red onion, peeled & finely diced 1 tablespoon lemon juice salt and pepper 1 tsp olive oil 1 small handful parsley, minced 1 small bunch of kale, minced 1 clove garlic, grated Instructions Preheat oven to400F. Cut avocado into quarters, lengthwise, discarding pit and peel. Drizzle with a little olive oil and season generously with salt & pepper. Bake for about 15 minutes or until hot and sizzling and starting to go a little golden at the edges. Meanwhile, place quinoa in a bowl Add onion, minced parsley, and minced kale Season and stir. Cover and stand until needed.
